CARROT CAKE FOR BREAKFAST? WHY NOT!

Now that I’ve got your attention, this is my carrot cake porridge 😁

Plenty of goodness in here...

CARROT CAKE PORRIDGE

1/2 cup Mix of gluten free oats and quinoa flakes

1/2 Grated small courgette

1/2 Grated carrot

1 Chopped dry apricot

1/2 inch Grated ginger (you my prefer more)

1tbsp Desiccated coconut

1/4tsp Nutmeg

1/2tsp Cinnamon

Pinch Himalayan pink salt

  1. Mix oats, flakes, water and salt, cook for a minute or two and then add remaining ingredient. Cook until ready.

  2. Top with some seeds, berries and coconut yoghurt.

  3. Enjoy!
